Finca Santuario was founded by Camilo Merizalde, who started with a clear vision and desire to create a unique farm, capable of producing the best specialty coffees in Colombia. He realised that the key was to create a biodynamic and diverse environment which will benefit the coffee as well as the volcanic soil and surrounding ecosystem in the long run. This is particularly important for the varieties at Finca Santuario because they are high quality, typically low yielding and often vulnerable in comparison with other varieties grown in Colombia. The harmonious relationship that Finca Santuario facilitates between the plants and their surrounding environment allows for the creation of some of the most spectacular coffees available from Colombia.

BLOCK coffee has a very special connection to Camilo’s work. At launch we offered exactly this coffee (a different batch of course).

In this Red Wash process, cherries are soaked in water for 4 hours and wet milled, leaving 55% of mucilage. A first anaerobic fermentation is conducted for 38 hours. Coffee is then washed with clean water and undergoes a second anaerobic fermentation with mossto that lasts 22 hours. Finally the coffee is sun-dried on African beds for 17 days.

Brew Guide

We recommend:

  • 18g of coffee

  • 300g of water

Pour 80g of water at 97°C. Let it bloom for 30 seconds.

Pour 70g of water 97°C, wait 30 seconds.

Pour 80g of water at 88°C, wait 45 seconds.

Pour the remaining 70g of water at 88°C.

Remember to allow all water to drain before the next pour.

Stir well before serving!
